Spoonful Health was founded by Emily Hendricks Jensen in 2026, but she’s been an advocate for chronically ill and disabled people since 2013.
Born with a condition called VACTERL Syndrome, back when it was called VATER Association, she has undergone 200 plus surgeries in her almost 40 years. In 2011, she married a man with VACTERL (they met at a VACTERL Network support group weekend in 2005) and they now live in Texas with their cat, Liza Jolene (named after Liza Minnelli and the Dolly Parton song).
Emily has a MFA in Creative Non-fiction and a BA in Journalism and Creative Writing. A former journalist who interviewed way too many politicians and quit when she decided that form of the rat race wasn’t for her, she now writes articles about living a chronically ill life for various websites, magazines and medical journals.
She has three siblings, a cousin she considers a sister, and seventeen nieces and nephews under the age of 13.
She created Spoonful Health Tracker because she herself needed a better way to track doctor appointments, medications and symptoms.
